If there’s one thing I know it’s a good breakfast sandwich. This particular sandwich combines flakey southern-style biscuits with melted cheddar cheese, a fried egg, applewood smoked bacon and sriracha honey for a hearty breakfast that might just send you into a food coma. It’s perfect for a lazy weekend breakfast when you can lounge on the couch after eating it.

Key Ingredients in This Recipe

  • Bacon – Cooking the bacon in the oven on an even layer on a baking sheet allows the bacon to cook evenly. This makes it easy to add to sandwiches. I like the smokiness the applewood smoked bacon adds, though it can easily be substituted with another in this recipe.
  • Cheddar Cheese -Always use sharp Cheddar when cooking. If you use mild or medium Cheddar the flavor will cook out and the recipe will be lacking in that cheesy flavor.
  • Sriracha – Sriracha is a chili garlic hot sauce made with vinegar. I love combining sriracha with mayonnaise to make a quick and delicious spicy mayo that tastes good on just about anything from bagel sandwiches to BLTs.

How to Make a Bacon, Egg and Cheese Biscuit with Sriracha Honey

  1. Heat oven. Preheat oven to 400ºF (200ºC).
  2. Bake the bacon. Lay the strips of bacon in a single even layer on a parchment paper-lined baking sheet. Bake until the bacon is crispy, about 15 to 20 minutes. Remove to a paper towel-lined plate.
  3. Broil biscuits to melt cheese. Preheat the oven to broil. Arrange the biscuit halves cut side up on a baking sheet. Place a slice of cheese on each of the bottom pieces of biscuit. Broil until the cheese has melted and the biscuits are golden brown, about 1 to 2 minutes.
  4. Make the sriracha honey. In a small bowl stir together the honey and sriracha until completely combined.
  5. Assemble. Lay a fried egg on the top of each biscuit bottom and sprinkle with chives. Divide the bacon among the biscuits and top with the sriracha honey. Drizzle sriracha honey on the top half of the biscuits and close the sandwiches.
  6. Serve. Serve immediately.
