Honey Glazed Roasted Carrots
It’s always good to have a recipe for an easy side dish up your sleeve. These honey glazed roasted carrots are great as a side to accompany chicken and other roasts – you can even pop them in the oven so they cook at the same time. Tossing the carrots in the honey before roasting intensifies the caramelizing. Look for carrots that are all about the same size so that they cook evenly. I skip peeling the carrots and scrub them instead.
1½ pounds tri-color carrots
2 tablespoons extra-virgin olive oil
2 tablespoons honey
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Preheat oven to 450º. Toss the carrots in olive oil until evenly coated then toss with the honey. Spread in a single layer on an aluminum foil-lined baking sheet. Season with salt and pepper and roast until tender and golden brown, about 30 minutes.
