Baked Cinnamon Sugar Sweet Potato Fries
Hot, sticky, sweet – I love these cinnamon sugar sweet potato fries on the side of burgers (especially veggie burgers) or just by themselves. This recipe is simple and the fries are baked in the oven so you don’t have to break out the deep fryer. I have a habit of frying things in oil and then letting the oil sit on the stove for days because I don’t want to clean up the greasy, smelly mess. Unfortunately, procrastinating does not work.
1½ pounds sweet potatoes, rinsed and peeled
2 tablespoons cornstarch
2 tablespoons extra-virgin olive oil
½ teaspoon cinnamon
1 tablespoon granulated sugar
½ teaspoon kosher salt, divided
Parchment paper, as needed
Preheat oven to 425º. Cut the sweet potatoes into ¼” x ¼” sticks. Add to a medium mixing bowl, and toss the sweet potatoes with cornstarch until evenly coated. Toss in the olive oil until evenly coated then toss with the cinnamon and granulated sugar.
Spread out the fries in an even layer on a parchment paper lined baking sheet. Season the fries with half of the kosher salt. Bake for 15 minutes then flip the fries over. Bake for an additional 10 to 15 minutes, until crispy and lightly browned. Season with the remaining salt and serve.
Serves 4 as a side.
