Set your avocado toast aside and make way for this bagel sandwich. The inspiration for this recipe comes from a small bagel place near my house in New Jersey called Flander’s Bagels. It used to be the go-to spot during high school when you could leave school early.
The sandwiches on the menu were all named after celebrities and this one was called the “Howard Stern.” It consists of an “everything” bagel, toasted and topped with chicken salad, Cheddar cheese and bacon.
Chicken – This is a great way to use up leftover roast chicken. I like using chicken breast in this recipe though any cut will work.
Cheddar Cheese – Always use sharp Cheddar when cooking. If you use mild or medium Cheddar the flavor will cook out and the recipe will be lacking in that cheesy flavor.
Bacon – Cooking the bacon in the oven on an even layer on a baking sheet allows the bacon to cook evenly. This makes it easy to add to sandwiches. I like the smokiness the applewood smoked bacon adds, though it can easily be substituted with another in this recipe.
How to Make a Chicken Salad Sandwich Bagel
Cook the bacon. Preheat oven to 400ºF. Lay the bacon out in a single layer on an aluminum foil-lined baking sheet and bake until golden brown and crispy, about 20 minutes.
Make the chicken salad. In a medium mixing bowl stir together the chicken, mayonnaise, mustard, black pepper and cayenne until completely combined.
Assemble the sandwich. Preheat oven to broil. Lay the bottom halves of the bagels out on a baking sheet. Top each bagel half with a scoop of the chicken salad and top with a slice of cheese.
Broil to melt the cheese. Broil until the cheese is melted, about 1 to 2 minutes. Top with bacon and close up the sandwiches. Slice in half and serve.
Tips and Tricks for This Recipe
