Chicken Salad Bagel Sandwich
Set your avocado toast aside and make way for this bagel sandwich. The inspiration for this recipe comes from a small bagel place near my house in New Jersey called Flander’s Bagels. It used to be the go-to spot during high school when you could leave school early. The sandwiches on the menu were all named after celebrities and this one was called the “Howard Stern.” It consists of an “everything” bagel, toasted and topped with chicken salad, Cheddar cheese and bacon.
The chicken salad portion of the recipe can be made a few days ahead of time and stored in an airtight container.
1 pound applewood smoked bacon
1 pound cooked chicken meat, diced
1/3 cup mayonnaise
½ teaspoon Dijon mustard
¼ teaspoon freshly ground black pepper
1/8 teaspoon cayenne
4 everything bagels, halved and toasted
4 slices sharp Cheddar cheese
Preheat oven to 400º. Lay the bacon out in a single layer on an aluminum foil-lined baking sheet and bake until golden brown and crispy, about 20 minutes.
In a medium mixing bowl stir together the chicken, mayonnaise, mustard, black pepper and cayenne until completely combined.
Preheat oven to broil. Lay the bottom halves of the bagels out on a baking sheet. Top each bagel half with a scoop of the chicken salad and top with a slice of cheese. Broil until the cheese is melted, about 1 to 2 minutes. Top with bacon and close up the sandwiches. Slice in half and serve.
