Triple Play Burger with Bacon, Pork & Beef
Bacon is amazing. All burgers are delicious. Why not put bacon inside of burgers?! The combination of bacon, pork and beef mixed together for the patty makes this burger juicy and extremely flavorful. I like to use applewood-smoked bacon as it adds a little maple and smoky flavor. Before cooking the burgers, add a small dimple to the middle of each patty so that they cook up flat. Burgers also shrink up by about 25% when cooking so make sure to make them larger than you think you will need them.
Don't forget to serve these burgers with a side of fries!
¼ pound applewood smoked bacon, finely chopped
½ pound ground pork
½ pound ground beef (85/15)
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
4 slices sharp cheddar cheese
4 leaves butter lettuce
4 brioche buns, split in half and toasted
1 medium heirloom tomato, sliced
4 slices red onion
In a medium size mixing bowl gently combine the bacon, pork and beef with your hands, being careful not to over-mix. Form the mixture into 4 equal balls then flatten them into discs. Season on both sides with salt and pepper.
Heat a grill or use a medium cast iron skillet over medium heat. Once the pan is hot, cook the burgers until desired doneness, about 4 minutes on each side for medium rare. Adding a slice of cheddar cheese right after flipping.
Add a leaf of butter lettuce to the bottom half of a brioche bun then add a burger followed by a slice of tomato and red onion. Close the burger and serve immediately.
Makes 4 single burgers or 2 double burgers.
