Rosemary Kumquat Gin Fizz

I took a cocktail class with a friend a few years ago and one thing I learned from it is how good kumquats are! Kumquats may look like mini oval oranges but they are much more bitter. I had always written them off until a mixologist had taught us to muddle them. The mix of the sugar, citrus and herbs makes for a refreshing summer cocktail.  



4 kumquats, halved

1 tablespoon fresh rosemary 

1 teaspoon cane sugar 

2 ounces gin

Club soda, as needed 

Rosemary sprig 



Add the kumquats, rosemary and sugar to a cocktail shaker. Muddle until the juices release from the citrus and the sugar dissolves. Add the gin and ice then close the shaker and shake vigorously. Pour into a cocktail glass filled with ice and top with club soda and a sprig of rosemary. 


Makes 1 (11-ounce) drink.
