My boyfriend’s mom first started making me this smoothie years ago and now I love drinking it in the morning as a meal replacement for breakfast or a mid-day pick-me-up. It keeps me full and gives me a healthy kick to start the day.
This green smoothie is perfect for the day after binging on fast food fries – you’ve got to have some balance! I made it with some spinach and kale as the base then mix with pineapple, mango, flax seed and coconut water. I topped them with additional flax seeds, unsweetened shredded coconut to make them a little more aesthetically pleasing here.
Kale – When I cook with kale I typically remove the tough ribs from the leaves. Since it will be blended there is not need in this recipe. I use a blend of kale and spinach in this recipe.
Mango – I like to keep a bag of frozen mango in the freezer for uses like this.
Pineapple – While I used fresh pineapple in this recipe you can also use frozen pineapple chunks instead.
Flax seeds – Flax seeds provide added protein and improve digestive health.
Shredded coconut – I use unsweetened, shredded coconut in this recipe so the bread isn’t overly sweet. I like the texture it adds to this smoothie.
Coconut water – Coconut water is good for hydration and contains plenty of electrolytes.
