Wassail Rosemary Buck

Wassail, a fragrant hot mulled cider beverage, is the perfect cocktail for the holiday crowd. In this recipe the wassail has been simmered and condensed over a few hours, then combined with vodka and ginger beer for a chilled aromatic holiday concoction. The wassail can be made up to two weeks ahead of time and refrigerated in an airtight container. My friend Kim made this drink for our holiday themed "Create Dinner" and it was a hit. You can read more about those dinners here. It was easy for her to pour the flavorful wassail into ice filled glasses and just add the vodka and ginger beer. The sprig of rosemary to garnish made it feel even more fitting for the holidays.



For the wassail:

3 cups orange juice

3 cups apple cider

4 cups cranberry juice

1 medium lemon, sliced

1 medium orange, sliced

½ (packed) cup dark brown sugar

1/3 cup sliced ginger

3 sticks cinnamon

2 teaspoons whole cloves


For the cocktail:

5 ounces wassail (from recipe above)

2½ ounces vodka

Top with ginger beer

Rosemary sprig



For the wassail:

In a medium saucepot over medium heat, add the orange juice, apple cider, cranberry juice, lemon, orange, brown sugar, ginger, cinnamon and cloves. Bring the mixture to a boil then reduce the heat to low and simmer until the mixture has reduced by about half, about 3 hours.

The recipe will yield about 5 cups wassail.


For the cocktail:

Fill an 8-ounce glass with ice then add wassail, vodka and ginger beer. Garnish with a sprig of thyme. 

Makes 1 (8-ounce) cocktail.
