Pumpkin Spice Oatmeal
It's that time of year again where pumpkin ends up in everything and I kind of enjoy that - minus the PSLs, that is. To the uniformed: I’m referring to the Starbucks drink with a cult following, the pumpkin spice latte. I happen to be in the minority of those who don’t enjoy the overly sweet, spiced drink so this oatmeal recipe is my way of enjoying pumpkin seasoning in a different respect. I also hate to burst your bubble but a pumpkin spice latte contains no actual pumpkin—this recipe does. Better yet, this oatmeal is incredibly easy to make.
3 tablespoons unsalted butter
1 cup classic rolled oats
¾ teaspoon pumpkin pie seasoning
¼ teaspoon kosher salt
½ cup canned pumpkin puree
½ cup whole milk
½ cup chopped walnuts
¼ (packed) cup dark brown sugar
¼ teaspoon ground cinnamon
Heat a medium saucepan over medium heat, add the butter and allow to melt. Add the oats and pumpkin pie seasoning to the pan stirring occasionally, until the oats are toasted, about 3 minutes. Stir in the salt and 2 cups of water. Bring to a boil then reduce to medium-low heat and cook, stirring occasionally, until the oats are tender, about 15 minutes. Add the pumpkin puree and stir to combine.
Divide among bowls and top with a splash of milk, walnuts brown sugar and a pinch of cinnamon.
